Currently, the animations are great, but often they seem choppy in their transition from fighting to blocking to walking. Is there a way to apply blendtrees or to make the animation seem less choppy in its transitions.

Whelp no one is answering so i might as well.
You don't need a blend tree. To smooth out block animations, Find the block animation you want to change, click on the transition arrow to the left and increase the transition duration. Be VERY careful, because block is based on the animation itself, so if you transition it slowly, the hero will be slow to block, and your game will feel sluggish and like crap.
Walking you need to uncheck "Quick Stop Anim" above the Jump Section on the character controller script on the main body.
A thing of note: If you make it longer to transition an animation such as increasing the transition duration, It will make you game feel more sluggish. You might want a longer transition then speed up the animation, so it's playing more animations per frame, so you don't lose responsiveness and you still get it looking a bit smoother
