I originally thought I had done something wrong but then I checked out the Shooter Demo scene. Turns out when you have a weapon aiming in the crouch position, the character sort of slides along the ground. Any ideas how to fix this?

This is not supposed to happen, can you record a small clip showing the issue? make sure to also get the inspector and capsule collider settings.
Another thing, we have a Crouch Height Reduction in the Third Person Controller > Grounded that you can change

Here's a video showing how the character slides while aiming in a crouch.
It appears to work okay when Locomotion is set to "Use Root Motion"

That's actually not an issue, it's just the crouch aiming move set is a little bit slow, you can increase the animation speed to match the rigidbody speed better
