Using the create NPC menu, I tried to make an NPC with a model I got from mixamo. There isn't a ragdoll attached to the Enemy AI. Do I need to make my own colliders or something? I am testing this out with Unity 2018 so maybe that's the problem?

Yeah I know right! I made sure to back up my project before converting cause I knew there was gonna be some crazy going on. I think I figured out the problem. When importing the model "Optimize GameObjects" was turned on, and it seemed there was a bone mismatch. Not sure if the optimization was the problem, but certainly the bone mismatch was. It pays to learn how to use the Avatar system lol
