I was trying to use the DemoScene called "vMelee_NoInventoryExample". How can I change the animation controller when the player change the weapon?

Hey man. All Weapons has a parameter called MovesetID. You can use this to change animations. In Animator the movesetID is auto changed when equip the weapon.
