Hi, is there a way to instantiate a consumable item on use? I'd like, for example, to have a potion spawn on the hand when using one, together with a drinking animation.

You can use the EnableAnim to trigger an custom animation of drinking potion And use the vAnimatorEvent to enable/disable the object that is already inside the player, just like we do for the Assault Rifle Reload, there is a magazine attached to the player, we use the AnimatorEvents to tell when to enable/disable this object.
