I think I already know the answer but I just want to double check.
I got an asset that is just a bunch of animations for sword and shield attacks/blocking, ect. Can I go beyond replacing animations and actually add more animations to the current controller?

That's always doable, but is dependent on your own knowledge. You will need to know Mecanim to add the animations, and a basic understanding of C# scripting to trigger them. Mecanim isn't hard, you just need to mess around with it for a while without expecting perfect results from the start, and read Unity's docs.

Well but of course, that's the hole purpose of the template.. for you to have a starting point, add your own animations and build your own unique game
